Pizza Pockets...So Fun, and So YUM!

Ingredients:

1 recipe of “fast and easy pizza dough.” (See Directions.)

(***Trader Joe's has pre-made pizza dough that works wonderfully!)

½ cup pizza sauce or spaghetti sauce, plus additional sauce for dipping (about

1 ½ cups)

2 cups of shredded mozzarella

“Pizza” toppings of choice

¼ cup Johnny’s Seasoning (or you can use grated Parmesan with a mix of some Italian seasoning and garlic powder)

Olive oil

Directions:

1. Prepare dough recipe:

3 cups flour (I used wheat flour.)
1 heaping tablespoon honey
1 heaping tablespoon oil
1 cup warm water
1 tablespoon yeast
½ teaspoon garlic salt

Mix all pizza dough ingredients together, except the flour. Add flour and knead for a bit.

2. Divide your pizza dough into 8 balls. Roll out each ball into a 6-inch round.

3. Spread 1 tablespoon of sauce in the center of each round, leaving about an inch from the edge without sauce.

4. Top each round with ¼ cup of cheese followed by some toppings. Fold in half and seal the edges together by pinching the dough.

5. Now, grill pizza pockets over indirect heat. In order to do this, turn your grill on high. Get it nice and hot, somewhere between 400-500 degrees. Then, turn off half of the grill heat. For example, mine has 3 sections, so I turned the front burner off, turned the middle on low, and kept the back burner on high.

6. Brush the bottom side of your pockets with a little olive oil and place them oil side town on the part of the grill that has been turned OFF. Brush the tops with oil and sprinkle ½ tablespoon of the seasoning over each pocket.

7. Close the lid of the grill and let them cook for about 8-10 minutes until the dough is completely cooked (brownish and crispy) and the cheese is melted. Try to not peek at them during this time because you will lower the temperature. If you must peek, only do it once.
