Orzo with Pine Nuts, White Wine, and Feta

Ingredients:
8 oz. orzo
4 Tbsp. olive oil, divided
1/2 of a small onion, finely chopped
2 garlic cloves, minced
3/4 c. dry white wine
2 tsp. dried oregano
1/4 tsp. salt
1/2 tsp. dried crushed red pepper
1 c. crumbled feta cheese
1/2 c. flat leaf parsley, chopped
1/2 c. pine nuts, toasted

Directions:
  1. Cook orzo according to package directions. *p.s. tip I just learned: Add 1 Tbsp. kosher salt to every 4 c. water....Drain well and set aside.
  2. Heat 2 Tbsp. olive oil over medium heat; add onion and saute until transparent.
  3. Add garlic and saute for 30 seconds.
  4. Add wine, oregano, salt, and red pepper and simmer for 3-5 minutes until reduced.
  5. In a large bowl, combine cooked orzo, 2 Tbsp. olive oil, and white wine reduction.
  6. Gently fold in feta, pine nuts, and parsley. Taste for seasoning and add more salt if needed.
