Oatmeal
- 3 cups 1% milk
- 1 1/2 cups steel-cut oats
- 1/2 cup packed dark-brown sugar
- 3/4 teaspoon salt
- Topping
2 apples (such as Gala or Granny Smith), cored and diced - 2 tablespoons packed dark-brown sugar
- 3 tablespoons sweetened dried cranberries or raisins
- 3 tablespoons chopped walnuts
Directions:
1. Coat a slow cooker with nonstick cooking spray. Combine milk, 3 cups water, the oats, 1/4 cup of the brown sugar and the salt in slow cooker. Cover and cook overnight on LOW for 9 1/2 to 10 hours.
2. Uncover and stir in remaining 1/4 cup brown sugar. Set aside. For the topping, coat a large nonstick skillet with nonstick cooking spray and place over medium heat. Add apples and cook 4 minutes, stirring occasionally. Add brown sugar, 1 tablespoon water and dried cranberries. Cook 1 minute. Remove from heat and stir in nuts.
3. Stir oatmeal in slow cooker until smooth. Spoon about a cup into a bowl and add a few tablespoons of the topping. Serve warm.
