To make this dish a bit more kid-friendly, or well-liked by those picky eaters, I switched up the cheese and added a few more ingredients.
Still fast, still easy, still delish!
Ingredients:
- 2, 16.5 ounce containers of grape tomatoes--about 3 cups (I used multicolored.)
- 1.5-2, Garlic + Fine Herbs Boursin puck cheese, depending on how "garlicky" you're feeling
- 1/4 cup olive oil
- 1/2 teaspoon salt
- fresh, cracked pepper (or 1/4-1/2 teaspoon pepper)
- fresh basil
- 14.5 oz. box pasta of choice (I used Barilla's Protein+ bowtie pasta. I'm sure you can use an entire box of regular pasta (16 oz.), just know that the more pasta you add, the less sauce you'll have.
- grilled chicken, chicken sausage, shrimp, crumbled Italian sausage (optional for added protein)
Directions:
- Preheat oven to 400 degrees.
- In a 9 x 13 baking dish, add the tomatoes and coat with olive oil. Season with salt and pepper. Stir to coat all tomatoes.
- Place cheese on top.
- Drizzle top of cheese pucks with a bit more olive oil + pepper.
- Bake for 30-35 minutes.
- With 15 minutes remaining on cook time, boil pasta until fully cooked.
- Remove from oven and combine tomatoes and cheese. Add garlic. Stir. Pop tomatoes with back of mixing spoon. (If you don't like the tomato skins in your sauce, add an additional step by putting mixture into blender or using an immersion blender and pureeing until smooth. Pour back into baking dish.)
- Add cooked pasta to baking dish and combine all ingredients. Top with basil and serve!
