So YUMMY! Sooooo EASY!
Ingredients:
1 tablespoon butter
1 leek (white and green parts only), sliced into half moons, RINSED WELL
8 oz. (2 cups) cheddar cheese
8 oz. cream cheese
1/4 cup mayonaise
3 tablespoons stout, such as Guinness
Directions:
Preheat oven to 400 degrees with a rack in the upper third.
In a large skillet, melt the butter over medium heat. Add the leek, season with coarse salt, and cook until tender and slightly caramelized, about 12 minutes.
Transfer leeks to a large bowl and add the cheddar cheese, cream cheese (room temperature), mayo, and stout. Mix until smooth.
Transfer to a 1-quart baking dish and bake until bubbling and browned on top, 18-20 minutes.
Serve with mini pumpernickel toasts or crackers.
Serves 8.
