Presto Pesto Panko Chicken


Serves two.

Ingredients:

1.5-2 lbs. boneless, skinless chicken breasts
1 cup Panko breadcrumbs
4 tablespoons pesto, divided
1 cup Mozzarella cheese


Directions:

In a small bowl, combine Panko, Mozzarella, a drizzle of olive oil, and a pinch of salt and pepper.

Preheat oven to 450 degrees.  Place chicken breasts on a lightly oiled baking sheet. Brush 1 tablespoon of pesto onto top of each breast. Press crust mixture into pesto to adhere. Roast in oven until chicken is no longer pink in center, about 20 minutes.
